Quindi, analizzando il quadro, che, pensandoci ora, potevo interpretare meglio, ho trovato delle analogie tra la raffigurazione e gli ingredienti, inziamo!

Prima di tutto ho usato il riso di qualità Venere per interpretare questo dipinto nel piatto, quindi Venere il protagonista del piatto, Venere la protagonista del quadro.
Venere è su una conchiglia, quindi io ho servito il riso Venere su una conchiglia.
Venere viene dal mare, quindi il mio risotto è di mare.
Venere nasce dalla spuma delle onde del mare, quindi la base del mio piatto è una spuma ottenuta con i frutti di mare

Ingredienti:
Riso Venere 2 manciate a persona
1 piccolo polpo già bollito e tagliato a tocchetti
100 gr di gamberetti gia scusciati
2 gamberoni a persona
cozze, vongole e capesante
Prezzemolo
vino bianco
Olio
Aglio
Sale
Peperoncino
lecitina di soia q.b
1 conchiglia di capasanta a persona
Procedimento:
Il riso Venere ci mette molto a cuocere, circa 40 minuti, quindi procedete con il bollire il riso in acqua bollente salata fino a cottura.
Intanto in una padella molto ampia soffriggete nell’olio l’aglio ed il peperoncino.
Unite le cozze, le vongole e le capesante (quest’ultime pulite e sgusciate), sfumate con il vino bianco.
Aggiungete poi gamberetti, gamberoni ed il polpo a tocchetti, ultimate con tanto prezzemolo.
Quando le cozze e le vongole si saranno aperte toglietele, togliete anche il polpo ed i gamberoni e teneteli al caldo.
In padella dovranno rimanere solo i gamberetti e le capesante, togliete a metà dei molluschi messi da parte il guscio, quindi aggiungeteli sgusciati in padella.
Tenete il resto al caldo.
Prelevate qualche cucchiaio di acqua di cottura delle cozze e company e mettetelo da parte.
Scolate il risotto, saltatelo in padella.
La guarnizione del piatto:
Con il minipimer preparate la spuma frullando l’acqua di cottura delle cozze tenuta da parte insieme a poca lecitina di soia.
Disponete la spuma come base del piatto.
Unite gamberoni, polpo, cozze e vongole con il guscio.
Nella conchiglia di capasanta disponete il risotto e guarnitelo con altra spuma.
